My tips for this recipe
- Rather than making 6 large muffins, I make 12 small ones that are perfectly formed and really enough in a serving to keep me happy.
- I use only 1/4 cup of honey, and no taste of honey actually comes through, but the sweetness is there all the time
- If you come across special offers on blueberries in your market / supermarket, buy them, wash them, dry them and freeze them. Mixing in frozen berries is so very easy, the fruit doesn’t get squished through the cake mix and they leave lovely bursts of sweet flavour when you bite into them!
- Swap out the blueberries for other berries – raspberries are just fantastic in this recipe!
